Cheesy melty quesadillas packed with vitamin C courtesy of Radish microgreens.

Ingredients:

  • Corn tortillas
  • Adobo sauce
  • Leftover cooked Turkey or Chicken (or skip for vegetarian)
  • Red Onion
  • SowYummy Radish Confetti microgreens (or any Radish microgreens including Daikon) 
  • Sharp cheddar cheese
  • Salsa and Guacamole to serve

 

Process

  1. Warm your pan on low heat
  2. Place a tortilla on the pan and top with a layer of cheese
  3. Place your meat (if using) and Radish microgreens as your second layer
  4. Top with a second layer of cheese and place a second tortilla shell on top
  5. Cover with a lid to allow cheese to melt 
  6. Flip Your stack half way through cooking process to make sure both tortiallas are perfectly toasted 
  7. Enjoy with a side of salsa and guacamole!
